New Socks!

Yarn: Lorna’s Laces Shepherd Sport in Tickled Pink
Monica: These are going to my good friend Barb. I’m racing to keep up with some SOS participants. There is no way I can pass anyone up because there are so many people participating in the knitalong and some of them have completed lots of socks already. In my defense I have been spending a lot of time trying to make lots of new friends so I can give away all that zucchini. I need lots of new friends because my current friends run away from me when I force them to take zucchini. I did find a yummy recipe for chocolate zucchini bread. Erica from my knitting group suggested that I substitute plain yogurt for half of the oil that the recipe called for and it was a great idea because it cut back on some of the fat content and it still tasted good.

Very pretty socks!
Zucchini….if I was closer I’d gladly take some. Have you ever tried zucchini pancakes? They’re very similar to potato pancakes, only better. Love them!

Might I recommend Julia Child’s zucchini stuffed with almonds and gruyere? Not exactly low-cal but pretty good.
For some of the larger zucchini, the only thing to do is leave them on friends’ doorsteps under cover of the dark of night…they’ll never guess it was you!

Oh, those are such pretty socks! I love them!! I’m not even trying to compete in the most socks contest for SOS. I am hoping to bake some zuchini bars this weekend, though.

The xoxo is the first thing I saw! You rock with socks! Have you tried subbing applesauce for 1/2 to 3/4 of the oil? Send me the choc zuke bread recipe if you have it electronically? Thanks!
